Tiramisu
Tiramisu 250gm Mascarpone Cheese (or cream cheese, ricotta) 3 eggs separated 300 ml cream ½ cup Pellegrino Marsala Fine or Cremovo 3 tbsp castor sugar ¾ cup strong coffee (Eurocaffe) 250gm pkt Bistefani Savoiardi biscuits Grated chocolate
Beat marscapone and cream together until thick, add egg yolks and 2tbsp sugar and beat again until pale in colour. Beat egg whites until thick, add remaining sugar and beat until stiff.
Fold lightly into marscapone mixture, set aside.
Combine Pellegrino Marsala and Eurocaffe coffee; briefly dip Bistefani Savoiardi biscuits into Marsala mixture one at a time.
Arrange on base of serving dish. Cover the biscuits with some cream mixture and chocolate. Continue layering the mixtures ending with a cream layer and chocolate.
Chill overnight. Freezes well.
