Chilli Penne with Caramalised Leeks
Chilli Penne with Caramalised Leeks 300gm San Cassiano Chilli Penne or Spaghetti 2 tbsp Pellegrino Extra Virgin Olive Oil (+ More for pouring over dish prior to serving) 1 red onion cut into wedges 1 large sliced leek 3-4 cloves of garlic, crushed 10gm porcini, soaked in warm water 1 tbsp basil 40gm pinenuts, lightly panfried or microwaved until pale brown in colour 50gm Parmesan cheese, shaved
Boil enough water for the pasta and when boiling add pasta and cook according to the instructions. At the same time gently saute the red onion and leeks approx 8 minutes or until tender. Add garlic and saute for 2 mins. Add porcini and basil and add extra olive oil if needed. Stir and gently cook for a further 4-5 mins. To serve, place the pasta on a plate. Place the leek mixture on top and sprinkle with Parmesan and pinenuts. Drizzle a little more olive oil on the top as desired. Serve with crusty bread and a wonderful bottle of red wine – we recommend Carpene Malvolti Cabernet Sauvignon or Centare Bianco a Chardonnay based white.
